]]>As usual, I seem to try new recipes when I’m taking them to parties & such. This one was perfect! Thank you. The pie was a big hit this evening. I look forward to making it again (& again). I would make the entire filling early in the day. Then later, get ready for my party and once I was ready I would prepare the filo and put it together. Cook it (30 min). If you don’t have a special hot dish carrier bag you can get a big oven dish, place a tea towel on it (to stop the pie from sliding around), place the pie (still in the casserole dish) on the tea towel. Cover it with cooking foil with 4 holes ripped into the top (this is important because if you don’t let the steam out the pastry will go from crispy to soft). Travel and then cut it up when you get there. This pie is great warm so if you want to eat it as finger food, cut it into small squares and as it will be warm they can eat it with their fingers. It’s also, really nice cold! If it’s an actual dinner and you want it hot, you can remove the tinfoil and reheat it there.
You could also make it early in the day. Let it cool down to room temperature and then pop it in the fridge. Leave it in the dish and travel with it (see how I do it above). Then, once you get there, remove the foil and then reheat it (on the same temp you cooked it on) until it’s up to the temp you want it to be.
