Hi Elizabeth! I love old-school recipes too that’s partly why I started my blog, so they don’t get lost 🙂 I love macadamias and also tried (unsuccessfully) adding white chocolate to this recipe. I first tried putting the nuts into the processor so they were fine and that was really good but I much prefer the chunky bits…..however because this shortbread is quite crispy, if the pieces are too big it won’t cut into perfect shapes, so a happy medium between fine and large pieces is definately the go! I’d love to know how it turns out, happy baking 🙂

I am an old-school maker of Scottish shortbread, using ground rice for that wonderful crunch. On handing around rounds of Shortbread this year, one of my friends requested a batch with…. macadamia nuts in it! After recovering from being hurled way outside my comfort zone, I came upon your recipe. To my friend I can now say, I found a great recipe!
