Hi Jennifer 🙂 Haha, that’s funny…..you must have been relieved, I was surprised to learn that that wasn’t just an old wives tale! I have an awesome carrot cake recipe that also is made with a fair amount of oil and is to die for, it makes things so moist doesn’t it.

Funny little story: When my first born was 1 year old, I had to take him to the doctor because he developed a weird orange tinge around his mouth and nose. Doctor took one look at him and said “Little fellow likes his pumpkins and carrots then?” LOL
